Red Lentil, Carrot, Apple, and Sweet Potato Soup

Ingredients:

  • 1 cup red lentils, rinsed and drained
  • 2 large sweet potatoes, peeled and diced
  • 2 large carrots, peeled and diced
  • 1 large apple, peeled, cored, and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh cilantro, for garnish (optional)

How to Make Red Lentil, Carrot, Apple, and Sweet Potato Soup:

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the diced sweet potatoes, carrots, and apple to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Add the red lentils, vegetable broth, ground cumin, ground coriander, ground turmeric, salt, and pepper to the pot. Stir to combine.
