  • 1/4 cup granulated sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 2 large eggs, beaten

  • 1 teaspoon salt
  • 1/2 cup evaporated milk
  • 4 cups all-purpose flour
  • 1/4 cup unsalted butter, softened

For Frying and Serving:

  • Vegetable oil, for frying
  • Powdered sugar, for dusting

How to Make Beignets

Step 1: Activate the Yeast

  1. In a large bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes, or until foamy.

Step 2: Make the Dough

  1. To the yeast mixture, add the beaten eggs, vanilla extract, salt, and evaporated milk. Mix well.
  2. Gradually add the flour, mixing until a sticky dough forms.
  3. Add the softened butter and continue to mix until the butter is fully incorporated and the dough is smooth.
  4. Cover the bowl with plastic wrap and let the dough rise in a warm place for 1-2 hours, or until doubled in size.

Step 3: Roll and Cut the Dough

  1. On a floured surface, roll out the dough to about 1/4-inch thickness.
  2. Using a knife or pizza cutter, cut the dough into squares or rectangles.

Step 4: Fry the Beignets

  1. In a large, deep pot, heat vegetable oil to 350°F (175°C).
  2. Carefully drop a few pieces of dough into the hot oil, being careful not to overcrowd the pot.
  3. Fry the beignets for 2-3 minutes per side, or until golden brown and puffed up.
  4. Remove the beignets from the oil and drain them on a paper towel-lined plate.

Step 5: Serve

  1. Dust the warm beignets generously with powdered sugar.
  2. Serve immediately and enjoy!
