Ingredients for Cheesecake Pops

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 12 ounces white chocolate, melted
  • Sprinkles, chopped nuts, or other toppings (optional)

How to Make Cheesecake Pops

  1. Prepare the Crust:
  • In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture into the bottom of a 9×13 inch baking dish lined with parchment paper. Set aside.
  1. Make the Cheesecake Batter:
  • In a large bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Add the sour cream and mix until combined. Add the eggs, one at a time, mixing well after each addition.
  1. Bake the Cheesecake:
  • Pour the cheesecake batter over the graham cracker crust and smooth the top. Bake at 325°F (160°C) for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool completely.
  1. Form the Cheesecake Pops:
  • Using a small cookie scoop or spoon, scoop out balls of cheesecake and place them on a baking sheet lined with parchment paper. Freeze the cheesecake balls for at least 2 hours, or until firm.
  1. Insert the Sticks:
  • Remove the cheesecake balls from the freezer and insert a lollipop stick into each ball. Return the balls to the freezer for another 30 minutes to set.
  1. Dip the Pops:
  • Melt the white chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth. Dip each cheesecake pop into the melted chocolate, allowing any excess to drip off. Place the pops back on the baking sheet and sprinkle with toppings, if desired.
  1. Chill and Serve:
  • Chill the cheesecake pops in the refrigerator for at least 30 minutes, or until the chocolate is set. Serve chilled and enjoy!
