How to Make Pepper Jelly

  1. Prepare your canning jars by washing them in hot, soapy water and sterilizing them in boiling water.
  2. In a large pot, combine the chopped bell peppers, chili peppers, and apple cider vinegar.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently.
  4. Reduce the heat to low and simmer the mixture for about 15 minutes, or until the peppers are soft.
  5. Add the sugar to the pot and stir until it is completely dissolved.
  6. Increase the heat to medium-high and bring the mixture to a full rolling boil.
  7. Stir in the liquid pectin and return the mixture to a full boil, stirring constantly.
  8. Boil the mixture for 1 minute, then remove it from the heat.
  9. If desired, stir in a few drops of food coloring to enhance the jelly’s appearance.
  10. Skim off any foam from the top of the jelly.
  11. Ladle the hot jelly into the prepared canning jars, leaving about 1/4 inch of headspace.
  12. Wipe the rims of the jars clean and screw on the lids.
  13. Process the jars in a boiling water canner for 10 minutes.
  14. Remove the jars from the canner and let them cool completely.
  15. Check the seals on the jars and store them in a cool, dark place.
