Mexican Stuffed Peppers Recipe

How to make Mexican Stuffed Peppers:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish, cut side up.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the onion and garlic to the skillet with the ground beef and cook until softened, about 5 minutes.
  5. Stir in the cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes, or until heated through.
