Strawberry Cheesecake Recipe

Ingredients for Strawberry Cheesecake:

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1/4 cup (60ml) sour cream
  • 1/4 cup (60ml) heavy cream
  • 2 cups (300g) strawberries, hulled and sliced
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • 1/4 cup (60ml) water

How to make Strawberry Cheesecake:

  1. Preheat the oven: Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch (23cm) springform pan with aluminum foil to prevent leaks.
  2. Make the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then set aside to cool.
  3. Make the filling: In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and heavy cream until combined.
  4. Pour the filling: Pour the cream cheese mixture over the cooled crust. Smooth the top with a spatula.
  5. Bake the cheesecake: Place the springform pan in a large roasting pan. Fill the roasting pan with enough hot water to reach halfway up the sides of the springform pan. Bake for 1 hour and 30 minutes, or until the center is set and the edges are lightly browned.
  6. Cool and refrigerate: Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours, or overnight, before serving.
  7. Make the strawberry topping: In a saucepan, combine the strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries break down. Remove from heat and let it cool.
  8. Serve: Remove the cheesecake from the springform pan and place it on a serving plate. Pour the strawberry topping over the cheesecake before serving.
