How to Make Watermelon Frosé:

  1. Place the cubed watermelon on a baking sheet lined with parchment paper. Spread the watermelon out in a single layer and freeze for at least 2 hours, or until frozen solid.
  2. In a small saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let cool completely.
  3. In a blender, combine the frozen watermelon cubes, chilled rosé wine, cooled simple syrup (sugar and water mixture), and lemon juice. Blend until smooth.
  4. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
  5. Pour the strained mixture into a shallow baking dish and freeze for about 1 hour, or until the mixture starts to firm up around the edges.
  6. Using a fork, scrape the mixture to break up any large ice crystals. Return to the freezer and freeze for another 2-3 hours, scraping every hour, until the mixture is completely frozen and has a slushy consistency.
